Ingredients
Chicken Salad
- 2oz Mixed Greens
- Cooked Chicken Breast or pieces
- 1⁄8 cup Red Onion, diced
- 1⁄8 cup Sweet Pepper, chopped
- 1⁄8 cup Cucumber, chopped
- 1⁄8 cup Avocado, diced
- 1⁄8 cup Carrot, grated
- 4-6 Cherry Tomatos, diced
- 1⁄8 cup Almonds or Pecans
- crumble of Goat Feta (optional)
- 1⁄8 cup Dried Cranberries (optional)
- 1 Apple, sliced (optional)
Balsamic Vinaigrette
- 1⁄2 tbsp Maple Syrup
- 1⁄2 tbsp Balsamic Vinegar
- 1 tbsp Olive Oil
